  • 1 lb red potatoes, cubed

  • 1 package of Trig’s Smokehouse Kielbasa Sausage or Polish Sausage, cut into 1/4-inch slices
  • 1/2 cup chopped onion
  • 1 tbsp olive oil
  • 2 tbsp brown sugar
  • 2 tbsp cider vinegar
  • 1 tbsp Dijon mustard
  • 1/2 tsp dried thyme
  • 1/4 tsp pepper
  • 4 cups fresh baby spinach
  • 5 Trig’s Smokehouse bacon strips, cooked and crumbled
