Ingredients
- 1 lb red potatoes, cubed
- 3 tbsp water
- 1 package of Trig’s Smokehouse Kielbasa Sausage or Polish Sausage, cut into 1/4-inch slices
- 1/2 cup chopped onion
- 1 tbsp olive oil
- 2 tbsp brown sugar
- 2 tbsp cider vinegar
- 1 tbsp Dijon mustard
- 1/2 tsp dried thyme
- 1/4 tsp pepper
- 4 cups fresh baby spinach
- 5 Trig’s Smokehouse bacon strips, cooked and crumbled
